• Rice 1.5 cups
  • Gurr 1 cups or more depending on how sweet it is
  • Water 3 cups
  • saunf, a tsp or so
  • salt, 1 tsp
  • oil about 1/8 cup or so
  • a few cardamom pods



How To Make Gurr Walay Chawal – Punjabi Sweet Rice

Boil gurr in water till it has melted. Taste this water to make sure it tastes sweet enough for the amount of rice. Different brands of gurr can have different amounts of sweetness in it. Take off the heat and pour it in another container slowly so that you see some sand settling at the bottom. Drain that off. My MIL taught me to do it this way because the sand is so fine, you can’t really use a sieve on it unless you use a malmal cloth.
Heat the oil in a pan and add cardamom pods, stir until they sputter. Add the gur water and heat until boiling. Now add the salt and saunf to it. Add the presoaked rice and leave on medium heat until the water has almost evaporated. Then cover and put on dam until the rice is done.

You may realise you need to make it a couple of times to get it right, the oil and the gurr etc. I can finally make it the way i think is perfect, after trying 2-3 times.
