How To Make Sindhi Baingan
Slice 1/2 kg eggplant, then marinate it with salt, red chilli powder, roasted crushed cumin seeds, coriander powder, turmeric, amchoor powder for 10-15 minutes. Now heat 1/2 cup oil, add 1tsp chopped garlic. Then add these eggplant slices and fry for free minutes and take out. In the same oil add 1/2 kg yogurt and cook till it thickens and leaves oil. Now add fried eggplant, cover and cook on low flame for 8-10 minutes. Garnish with chopped green chilies and fresh coriander.
